Sous Chef

to join a small, high-calibre team. This is a technically disciplined, seasonal kitchen with a strong track record— alumni have gone on to cook in two-Michelin-starred restaurants abroad — and a structure that rewards chefs who take their craft seriously.

The Role You will work directly under the Head Chef, deputising on the pass, owning your sections, and growing into genuine creative input over time. The roster is fixed, predictable, and consistently delivered— no surprises, no chaos. The food is elegant, seasonal, and recipe-led — produce-driven and built on systems that have been refined over years. Your job is to master them first, then make them yours. Specials, section ownership, and monthly menu input follow in time.

Key responsibilities:

Running sections and deputising on the pass

Mise en place and service execution across a Thursday–Sunday service block

Brining, sous vide, and seasonal garnish work to established standards

Contributing to ordering, GP management, and kitchen logistics

Developing specials and participating in monthly menu planning over time
