Description
The Mespil Hotel has an exciting opportunity for a Chef de Partie to join our Kitchen team.

The main responsibilities of this role are to take responsibility for a designated section of the kitchen, ensuring the preparation and delivery of high-quality dishes in line with hotel standards, while maintaining excellent hygiene, safety, and teamwork, and to assist the Sous Chef in the preparation, cooking and service of all hotel food.

This is a challenging position for a highly motivated, hardworking individual interested in developing themselves in the hospitality industry.

Areas of responsibility will focus on the following areas:

Food Preparation&Service

Prepare, cook, and present dishes to the highest standard within your section

Ensure consistency in taste, presentation, and portion control

Follow recipes and instructions from the Head Chef/Sous Chef

Support menu development and daily specials where required

Section Management

Take full ownership of your assigned section during service

Ensure all mise en place is completed before service

Maintain organisation and cleanliness of your station at all times

Coordinate with other sections to ensure smooth service delivery

Team Support&Supervision

Assist in supervising and training Commis Chefs and junior staff

Delegate tasks effectively and monitor progress

Foster a positive and collaborative team environment

Food Safety&Hygiene

Ensure full compliance with HACCP and food safety regulations

Maintain high standards of cleanliness and food handling

Monitor stock rotation, labelling, and storage procedures

Stock Control

Assist with stock control, ordering, and inventory management

Minimise waste and ensure efficient use of ingredients

General Duties

Work efficiently in a fast-paced environment

Maintain a professional appearance and attitude

Be flexible with working hours, including weekends and holidays

Adhere to all company policies and procedures

Candidate Requirements Experience&Qualifications

Previous experience as a Chef de Partie or strong Demi Chef de Partie

Relevant culinary qualification (preferred)

Knowledge of HACCP and food safety standards

Skills&Competencies

Strong cooking and organisational skills

Ability to work under pressure and meet deadlines

Good communication and teamwork skills

Attention to detail and commitment to quality
