The Mespil Hotel has an exciting opportunity for a Chef de Partie to join our Kitchen team.
The main responsibilities of this role is to take responsibility for a designated section of the kitchen, ensuring the preparation and delivery of high-quality dishes in line with hotel standards, while maintaining excellent hygiene, safety, and teamwork.to assist the Sous Chef in the preparation, cooking and service of all hotel food.
This is a challenging position for a highly motivated, hardworking individual interested in developing themselves in the hospitality industry. Areas of responsibility will focus on the following areas:
Food Preparation & Service
- Prepare, cook, and present dishes to the highest standard within your section
- Ensure consistency in taste, presentation, and portion control
- Follow recipes and instructions from the Head Chef/Sous Chef
- Support menu development and daily specials where required
- Take full ownership of your assigned section during service
- Ensure all mise en place is completed before service
- Maintain organisation and cleanliness of your station at all times
- Coordinate with other sections to ensure smooth service delivery
- Assist in supervising and training Commis Chefs and junior staff
- Delegate tasks effectively and monitor progress
- Foster a positive and collaborative team environment
- Ensure full compliance with HACCP and food safety regulations
- Maintain high standards of cleanliness and food handling
- Monitor stock rotation, labelling, and storage procedures
- Assist with stock control, ordering, and inventory management
- Minimise waste and ensure efficient use of ingredients
- Work efficiently in a fast-paced environment
- Maintain a professional appearance and attitude
- Be flexible with working hours, including weekends and holidays
- Adhere to all company policies and procedures
- Previous experience as a Chef de Partie or strong Demi Chef de Partie
- Relevant culinary qualification (preferred)
- Knowledge of HACCP and food safety standards
- Strong cooking and organisational skills
- Ability to work under pressure and meet deadlines
- Good communication and teamwork skills
- Attention to detail and commitment to quality

- Willingness to learn and develop
