Chef De Partie, Tralee

We are seeking a passionate, skilled, and motivated Chef de Partie to join our culinary team. This is an exciting opportunity for an experienced chef to take ownership of a designated section of the kitchen and contribute todelivering exceptional dining experiences. The successful candidate will have a strong attention to detail, a commitment to quality, and the ability to thrive in a fast-paced environment while maintaining the highest culinary standa rds.

• Prepare, cook, and present dishes to the highest standards of quality and consistency.
• Assist in the development of seasonal menus and daily specials.
• Ensure mise en place is completed efficiently and to required standards.
• Supervise and support Commis Chefs and Kitchen Assistants.
• Maintain food safety, hygiene, and HACCP compliance at all times.
• Monitor portion control and minimise food waste.
• Ensure all dishes are prepared and presented according to established recipes and plating guidelines.
• Support stock control, ordering, and inventory management.
• Maintain a clean, organised, and safe working environment.

• Minimum 2-3 years' experience in a similar role within a hotel or high-quality restaurant.
• Formal culinary qualification preferred.
• Strong knowledge of food safety and HACCP procedures.
• Ability to work under pressure in a busy kitchen environment.
• Excellent organisational and time-management skills.
• Strong team player with good communication skills.
• Flexibility to work evenings, weekends, and holidays as required.
